- 1/2 cup butter
- 3/4 cup flour
- 2 cups beef or chicken broth
- 1/2 cup chopped cooked beef or chicken
- 1/4 cup chopped onion
- 1/4 cup chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
- Instructions:
- In a large saucepan, melt the butter over medium heat. Add the flour and whisk until it forms a paste. Cook for about 2 minutes, stirring constantly.
- Gradually add the broth, whisking constantly until the mixture is smooth. Cook for 5-7 minutes or until the mixture thickens.
- Add the chopped beef or chicken, onion, parsley, salt, and pepper. Stir well to combine, and cook for another 5 minutes or until the mixture is thick and creamy.
- Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours or until the mixture is firm.
- Using a spoon or a cookie scoop, shape the mixture into small balls (about the size of a ping-pong ball).
- In a shallow bowl, beat the eggs. In another shallow bowl, place the breadcrumbs.
- Dip each ball first in the beaten eggs, then roll it in the breadcrumbs until coated.
- Heat oil in a deep frying pan or a deep fryer to 375°F (190°C).
- Fry the bitterballen in batches for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain the excess oil.
